The Aga Khan Academy Maputo is seeking a Head Chef, for Matola.
Purpose
To direct and guide the culinary development and food production team in providing a consistently, nutritious, high quality and pleasant food experience, in line with the Academy’s values and standards and focus on sustainability.
Context
The Aga Khan Academy, Maputo, is the third academy in the planned network of state-of-the art, residential, IB schools dedicated to expanding access to education of an international standard of excellence.
Responsibilities
- Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality meals and to minimize food costs and wastage; exercises portion control for all items served;
- Ensure availability of stock and raw ingredients with proper planning and procurement processes and Store coordination;
- Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout the kitchen areas;
- Ensures that all Kitchen staff are trained to carry out all responsibilities to a high standard;
- Sets up training and evaluation programmes for Kitchen staff;
- Maintain stock levels of all kitchen supplies and conducts regular physical inventories of food supplies and assesses projected needs;
- Works with local suppliers and vendors to obtain high quality ingredients;
- Anticipate students’ and staff needs and surpass their expectations;
- Establishes controls to minimize food and supply waste and spoilage;
- Establishes best practices for Kitchen store, inventory, and record keeping;
- Ensure meals are produced on time, and enough are available throughout service period;
- Ensure that menus are changed and updated on a regular basis, as per set school guidelines and student needs, in coordination with school head of administration;
- Cooks or directly supervises the cooking of items that require skillful preparation;
- Evaluates the menu food items to ensure that quality standards are consistently attained;
- Attend the food committee meetings;
- Ensure all meal services to students and staff are conducted in a highly professional and efficient manner, adhering to best practices in employee safety and food safe standards;
- Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment;
- Coordinate with the Facilities department to carry out preventive maintenance program in the kitchen;
- Analyze and monitor costs, (material, energy, and staff) to ensure high proper usage of resources on a regular basis and initiate corrective action whenever necessary;
- Ensure department employees are fully trained through constant on-the job training;
- Ensure compliance with the occupational health and safety regulations;
- Any other duties as assigned to you.
Requirements
- Bachelor’s Degree in Food Production, Catering, or Chef Certificate;
- Certification in Food & Beverages Operations;
- Certification in Workplace Safety and Health;
- Certification in Stores/Purchasing Management;
- Minimum of 5 year’s experience in Food Management, Catering Management;
- Track record of Leadership and Staff Development and Team Development;
- Honesty, transparency and good time management;
- Proficient in Microsoft Office – Word and Excel;
- English proficiency.
